While Islay was the inspiration for Akkeshi, the Akkeshi team’s ultimate goal is to evoke the local terroir, create an “All-Hokkaido” whisky or “Akkeshi All-Star” whisky that has a sense of place.

Then, I headed back down, and guess what? I bumped into this old dude who started chatting me up. He was super friendly and told me stories about Akkeshi’s past. I was all ears! He mentioned how the city used to be a major port back in the day. I was like, “Wow, I had no idea!”
